Rice dumpling making skills

This activity now includes the techniques of making Glutinous Rice Dumplings and the Rice Dumpling with Lye Making Technique in the Hong Kong Intangible Cultural Heritage Database, which published the first "Hong Kong Intangible Cultural Heritage Representative List".

Glutinous rice dumplings basically fall into two categories, namely rice dumplings with lye and rice dumplings with salted pork, which are traditional festive food of the Dragon Boat Festival.

Dragon Boat Festival is on The fifth day of the fifth lunar month.

Event Details

Experienced instructors explain and teach traditional rice dumpling techniques. Each person makes 3 pieces of Hakka rice dumplings, which can be steamed at home, and share experience and taste Hakka rice dumplings. The teaching includes vegetarian bean rice dumplings, bacon rice dumplings, etc.

History
Rice dumplings are a festival food for the Dragon Boat Festival. They were called jiao millet in ancient times. As early as in "Shuowen Jiezi" 《說文解字》, the word "糭" already exists. It has a long history.

In the Southern and Northern Dynasties, there were "Yizhi" rice dumplings (益智糭)  (Yizhi is a ginger herb); in the Tang Dynasty, there were Jiuzi rice dumplings (九子糭, nine rice dumplings of different shapes, sizes and colors strung together with silk threads), Baisuo rice dumplings (百索糭, rice dumplings wrapped with five-color silk); In the Song Dynasty, there were horn rice dumplings, cone rice dumplings, rice dumplings (rice rice dumplings wrapped in bamboo leaves), etc. Lu Xizhe of the Northern Song Dynasty recorded in "Sui Shi Za Ji": "Duan Wu was wrapped with wild rice leaves because the ancients tubed rice. Chestnut, walnut, ginger, cinnamon, musk, etc. In modern times, moxa ash is mostly burned and boiled with juice, and its color is like gold." Li Tiaoyuan's "Notes on Nanyue" in the Qing Dynasty recorded Guangdong zongzi, and the ones wrapped in winter leaves were called "gray zongzi". , The ones wrapped in bamboo leaves are called "tube rice dumplings" (筒粽), the triangular ones are called "jiaozi rice dumplings" (角子粽), and the meat rice dumplings.

Activities
Since ancient times, the method of wrapping glutinous rice dumplings is roughly the same. They wrap the rice in leaves, tie it with a rope, and then put it in a pot to cook. On this basis, people add different fruits, meat and herbs to the rice dumpling. Different types of dumplings are formed.
