Kamei Chicken

 

The Birth of Kamei Chicken

 

Kamei Chicken is a chicken breed developed by the Kadoorie Agricultural Research Centre of the University of Hong Kong. In the 1990s, Professor Daniel Chan Kwong On, the director of the centre, used more than a dozen nearly extinct South China chicken breeds to select excellent breeds to hybridize and become today's Kamei chicken. Mr. Kwok Ming Cheung, known as the "Father of Kamei Chicken", brought the Kamei chicken seedlings back to the farm for breeding. All are cultivated and produced locally in Hong Kong. They are local chicken breeds and are available throughout the year.

 

Thin skin and tender meat


The Kamei chicken has a "beard" under its mouth. Its mouth and feet are smaller than ordinary chickens. Its chest is pointed and weighs about 2.5 catties (1500g).  Kamei chicken has thin skin, thin bones, tender meat, less fat, and strong chicken flavor; it is rich in collagen and does not contain any added hormones or additives; the meat is refreshing and delicious after being cooked; its disease resistance is also strong. Kamei chicken is divided into Kamei chicken (hen) and Kamei Rooster chicken.

 

Safe and secure


Each Kamei chicken is equipped with a white foot ring with the registered trademark of "Kamei Chicken" and serial number. Each batch of chickens is double quarantined before being sold to ensure that the chickens are free of virus and drug residues, and then the meat taste test by the test group and finally sold on the market by special car delivery.
