The meat quality is similar to Kamei chicken, but the skin and meat are slightly higher in fat than Kamei chicken (but much less than ordinary Yellow chicken), so Wongkin chicken is tender and soft, with strong aroma, suitable for steaming and baking.

Due to the natural growth of Kamei chickens, the size of each chicken is different. You cannot cancel the order for reason of "chicken too large or "chicken too small" on the day of delivery. I hope you can understand! Kamei chicken will try to provide the weight according to the needs. We will make up the difference in case the weight gap is more than 10%.

Steaming chicken time suggestion
Put the marinated chicken into the pot, steam over high heat for 15 minutes, then simmer for 10 minutes.
Remove the chicken and cut it into pieces and put it on a plate.
Longjing Tea Fragrance Wongkin Rooster
Ingredients: 1 Wongkin Roostern, 4 tbsp Longjing Tea
Marinade: 1 tsp sand ginger powder, 2 tsp salt and pepper, 2 tbsp light soy sauce, 2 tbsp Shaoxing wine, 2 slices ginger, 1 spring onion
1. Wash the chicken and remove the lungs, drain and marinate with marinade for 1 hour.
2. Steam the chicken in a plate for 20 minutes, remove and drain.
3. Stir fry the Longjing tea leaves, put a piece of tin foil in the wok, put the fragrant tea leaves in the wok,
Then put the chicken on the steaming rack, cover and bake over medium heat for 6 minutes, cut into pieces and place on a plate.
Hainanese Chicken
Material: 1 Wongkin Rooster, 4 pieces of ginger, 5 pieces of spring onion
Marinade: 4 tbsp Huadiao wine, 2 tbsp salt
Ginger paste: 2 pieces ginger, 4 chopped green onion, 4 tbsp rice bran oil, 1/2 tsp five-spice powder, 2 tsp sugar
Sweet soy sauce: 1 tbsp Guan Zhen dark soy sauce, 1 tbsp Guan Zhen light soy sauce, 2 tbsp mirin, 1 tsp sugar
1. Wash and dry the chicken, coat the whole chicken with marinade, marinate for half an hour and put a little ginger and green onion in the chicken
2. Put water in the pot to cover the chicken, add ginger and spring onion and bring to a boil, turn to low heat for 8 minutes, reverse and cook for 6 minutes, turn off the heat and bake for 10 minutes.
3. Take out and soak in ice water for 5 minutes. *Prick the chicken spleen with a toothpick, it will be cooked without blood and water*
4. Take out the chopped pieces.
5. Puree the ginger with a blender, mix the ingredients and serve
6. Pour all the sweet soy sauce ingredients into the pot, bring to a boil and simmer for 6 minutes until thickened.
