Wing Ming Chicken (永明雞) – Hormone-free Chicken



Yuen Long Wing Ming Farm is owned by Mr. Li Leung Kee (李良驥),Mr. Li has over thirty years experience in chickens raising, who used French chickens and Hong Kong “Shiqi” chickens (石岐雞) to mate, cultivate a new mixed chickenbreed “Wing Ming chicken”, it is speed growing with tender meat, it has pure black coloured feather and feet, buff colour skin and black colour meat.

 

All chickens in Wing Ming Farm are raised by the best fodder from Hong Kong with first class of corn and fish meat powder, Chinese herbs to avoid plague, and no antibiotics to be used. Mr. Li insists to sell fresh chicken, not sell frozen chicken.

 

Wing Ming Chicken(pullet) 永明雞 (雞項)

Pullet – Female chicken did not lay egg, Buff coloured feather, feet and meat.

 

Wing Ming Black-boned Chicken永明烏雞

Pure black coloured feather, meat and bone. It is trusted toreinforce body fluid and nourish the blood, enrich liver and kidney. Its meatis tender and tasty. Wing Ming Chicken is suitable for soup and steam cook.

 

Female black-boned chicken with sesame oil - can help people to reduce fatigue and debility, benefit to the women after give born in firstmonth.

Male black-boned chicken is good to fetus, suitable forpregnant women.

Black-boned chicken can delay senility, avoid boneresorption, rickets, and iron deficiency anemia.

Wen Chang Chicken文昌雞

Wen Chang Chicken, another name is Choy’s Chicken, the topeight Cantonese premium chicken breed.

The characteristics of Wen Chang Chicken are (3 small, 2 short) : head, neck and feet are small. Neck and feet are short.

Thin skin, subcutaneous fat is normal. Meat texture is tender, smooth and delicious. It is suitable for Hainan chicken and steamed.

 

Hu Xu Chicken 鬍鬚雞

Hu Xu Chicken has another names “Three Yellow Hu Xu Chicken”,“Lung Guang Chicken”, “Lung Mun Chicken”. Buff colour beak, buff colour feather and buff colour feet, some fluffy feather under the beak, likes beards.

It has thick tender meat, fatty breast and tail, buttery but not greasy. It is suggested to cook poached chicken.


Old Hen 老母雞

The supply of living old hen in Hong Kong is rare. Old hen can be used to warm the middle and nourish qi, replenish, deficiency and fatigue, strengthen the spleen and stomach.

It has less subcutaneous fat, texture of meat is chewy, with rich chicken taste. It is recommended to make soup and stew.


Capon (Emasculted male chicken) 扇雞

Castrated or neutered rooster is called Capon. Emasculated rooster meat will be changed to soil fleshy with meaty flavour. It is suitable to stew.


Cockerel (Young male chicken) 生雞

Cockerel is less fat, soft meat texture, and fresh in taste. Many cooking method can be used, for example: poached chicken, Hainan Chicken, steamed, baked, braised and stir fried.


Wing Ming Egg 永明雞蛋

Because Wing Ming chickens are raised by hormone-free fodder, the eggs are also hormone-free.

Rich in egg flavour, daily collects from Wing Ming Farm.
