"New Territories Lamb" refers to goats or Lamb raised in Hong Kong's New Territories (such as Sheung Shui, Fanling, Yuen Long, Tuen Mun areas). These animals are often free-range or semi-grazed, feeding mainly on wild grass and weeds with minimal commercial feed, resulting in firmer meat texture, a subtle grassy flavor, and generally milder mutton taste compared to intensively farmed varieties. While most New Territories Lamb are kept for organic manure production, weed control, or personal use, some are supplied to local halal markets or restaurants. Popular in winter, the meat is commonly used in dishes like braised lamb belly (羊腩煲), stewed mutton, or hotpot, valued for its warming and nourishing properties in traditional Chinese cuisine.
