New Territories goat refers to free-range or semi-grazing goats or grass-fed sheep raised in the New Territories of Hong Kong (such as Sheung Shui, Fanling, Yuen Long, Tuen Mun, etc.). These goat mostly feed on natural wild grasses and are rarely fed artificial feed, resulting in firmer meat with a light grassy aroma and a relatively mild muttony smell (depending on the breed and raising method). The fat is evenly distributed, making them suitable for slow cooking or soups. Although most New Territories sheep are not raised for commercial meat consumption, some sheep are only supplied to local halal markets or a few restaurants. They are especially popular in winter, with common dishes including traditional lamb stew, braised lamb belly, and lamb hot pot. These dishes are believed to have warming and nourishing properties, making them a traditional winter tonic in Hong Kong.
