Standing for 40 years – Wing Ming Farm

 

Local chicken farm getting fewer and fewer

In the 1980s, Hong Kong had thousands of chicken farms, and the live poultry farming industry was very prosperous.

Since the government launched the "Poultry Farm Closing Special Grant" in 2008 to reduce the risk of avian influenza, fewer and fewer farms supply local live chickens. Wing Ming Farm is one of the 28 remaining farms that insists on providing local high-quality live chickens to the public.

 

Introduction of Wing Ming Farm

Wing Ming Farm is located in Yuen Long, New Territories, away from the city, surrounded by mountains and rivers, with fresh air, suitable for live poultry breeding.

In the past, most of the chickens on the farm were Shiqi chickens, which chickens are thin skin, tender meat and less oily. In 2003, Wing Ming Farm introduced French chicken and mixed breeds  them with local chicken breeds,  to become the current Wing Ming chickens.

The Mixed-Breed grew fast and meat is better quality; the eggs had good color and taste.

Currently Wing Ming Farm not only raise Wing Ming chicken, but also black bone chicken (烏骨雞) with very high medicinal value, which can be used for boiling soup or steaming.

There are also old chickens, roosters, and raw chickens, all suitable for cooking and stewing, there is always one suitable for you.

 

Farmer's story

Chicken farmer Mr. Li started raising chickens in the 1980s. The avian flu in 1997 did not make him give up. He raised it for 40 years. From the beginning, he is learning everything from scratch, to the use of artificial insemination instead of natural mating to reduce the risk of infectious diseases; mixed breed with French chicken breeds to obtain better chicken breeds; and use more natural Chinese medicine instead of antibiotics, etc.

This family-style chicken farm has the painstaking effort of three generations including his parent of Mr. Li.  His heart is to let the citizens taste the purest chicken and egg flavours, so that the hard-working people in the society can recall the taste of the past and comfort the heart of the Hongkongers.

He is experienced now and introduced his own brand chicken "black feather chicken" and "black-bone chicken" suitable for steaming. The meat is tender and smooth, and the chicken tastes sweet.

 

Wing Ming Chicken - a good memory for the best chicken in the past

In 2019, Mr. Li spent more than one million to modernize the chicken shed. He believes that in the future, Wing Ming Farm will provide citizens with better quality local live chickens.

Wing Ming Farm strives to produce fresh chickens according to guideline by the Hong Kong Agriculture, Fisheries and Conservation Department (AFCD) without any added hormones in Hong Kong. It is the painstaking effort of chicken farmer Mr. Li Leung Ki to raise chickens for more than 30 years. 

Chickens are only feed with Hong Kong-produce "Dai Sang Feeds", mixed with first-class corn and sustainable fishmeal. The farm is a one-stop production of its own family, with quality assurance.
