Chicken farming mainly relies on excellent chicken breeds + scientific feeding (high protein feed) to increase egg production, the street market is so cheap, mainly domestic use of scientific feeding, centralized breeding and high protein feed to increase production.
Why is it so cheap?
Commercial reasons: Large quantities of eggs imported from Hubei and other places, more supply, high competition (more street market stalls), sometimes stall owners in order to clear the stock or attract customers, to sell at a low price. Previously, Sham Shui Po, Mong Kok, Kwun Tong, Ngau Chi Wan and other places have $ 20/30 pieces, or even cheaper. Netizens have tested that the egg is not bad, the yolk is orange, and the value for money is high.
Cost logic: Chicken farms mainly rely on excellent chicken breeds + scientific feeding (high protein feed) to increase egg production, rather than relying on hormone injections. Experts have said that exogenous hormones (especially protein-like growth hormone) are easily digested and broken down when taken orally, injections are expensive and troublesome, and chicken farm owners are not so foolish to spend this money. Instead, expensive supermarket eggs ($30-40 a plate) are sometimes just packaging and brand premiums, maybe the same shipment.
Summary: Local eggs are one of the more reassuring options, especially in pursuit of freshness and support for local farming, but not an absolute guarantee. The key to safety is reliable source + fresh + cooked, not just “local vs imported”. The Hong Kong Center for Food Safety has strict overall supervision. Most of the egg samples tested in the past passed. If you buy eggs frequently, it is recommended to pay attention to the latest tests from Vitargent (9 "Green Fish" in 2025, including local and foreign).
Local eggs have certain advantages, mainly high freshness and short transportation distance, with relatively low risk. However, safety does not rely solely on the words “local” but also on specific farm management, availability of reliable labels and independent testing. Local egg farms in Hong Kong are small and regulated by the Department of Fisheries, Agriculture and Nature Conservation. Some farms insist on no added hormones and no antibiotics. They use natural or scientific feed to raise chickens.
suggest:
Check immediately after buying: the eggshell is clean, no cracks, no odor. Keep it in the refrigerator for longer.
Freshness test: Put clean water in, sink + lie flat = fresh; float or upright = not fresh.
Cooking through: Frying, boiling, and steaming are fine, high temperatures reduce potential risks.
If worried: Choose brands with “hormone-free, antibiotic-free” labels, or the more expensive supermarkets (but also read the test report). Some tests have shown that some Japanese eggs, local eggs, etc. perform well.
The tests included well-known local and international brands, including: 琉璃之月 (Japanese White Eggs), 新紀元卵(Shinkigen Ran) (Japanese White Eggs), 首爾太陽 (서울선, Korean Fresh Brown Eggs), Xueyingji (Japanese White Eggs), Nongting (Hubei Fragrant Pink Fresh Eggs, Large), Boutique Farm (Fresh Eggs), Best Choice (Cage-Free Eggs, M Size), Best Choice (US Grade A Fresh White Eggs, L Size), City'super (Free Range Fresh Spanish Eggs), etc.
The results of this test showed that mid-priced eggs (priced between >HK$2.60/egg and <HK$3.80/egg) performed best, with all six egg samples receiving a "Green Fish" rating (excellent quality). The following are listed in no particular order:
1. 新紀元卵(Shinkigen Ran) "Japanese White Egg"
2. 農町 "Hubei Fragrant Pink Fresh Egg, Large"
3. 雪櫻姬 "Japanese White Egg"
4. Best Choice "Cage-Free Egg, M size"
5. Finest Garden "Fresh Egg"
6. Seoul Sun "Korean Fresh Brown Egg"
The 2 "Green Fish" samples priced at ≥HK$3.80/egg are:
1. Best Choice "American Grade A Fresh White Egg, L size"
2. City’super "Free Range Fresh Spanish Eggs"
Store eggs in the refrigerator's crisper drawer, avoiding prolonged exposure to room temperature to extend their shelf life.
It's best to keep eggs in their original packaging to prevent shell damage and reduce the risk of bacterial contamination.
Store eggs in a cool, dry place, away from direct sunlight and high temperatures.
Do not wash eggs, as the natural membrane on the shell protects them from bacterial contamination.
When storing, keep eggs away from other foods to prevent cross-contamination.
Make sure to store raw and cooked eggs separately to avoid mixing them.
The real risk is not “hormones” (experts have repeatedly clarified that feeding hormones does not effectively induce eggs, but instead increases the risk of chicken disease); double yolk, large eggs are mostly caused by breed/nutrition/stress.
More likely it is antibiotic residues, pesticides, contaminants or salmonella. The Food Safety Center has sampled individual imported eggs with trace amounts of antibiotics or pesticides in the past, but local eggs are also non-zero risk. But the risk is very low.
