Dried butterfly pea flowers are made by naturally drying or low-temperature drying the petals of the butterfly pea flower (scientific name: *Clitoria ternatea*). Native to Southeast Asia (such as Thailand, Malaysia, and Indonesia), the flowers are a vibrant deep blue and rich in anthocyanins, a natural source of food coloring.

The dried butterfly pea flowers retain the blue pigment of the fresh flowers. When steeped in water, they release a dreamy sapphire blue tea with a light, slightly herbal flavor and almost no noticeable sweetness or bitterness. When lemon juice or other acidic substances are added, the tea instantly turns purple or pinkish-purple due to the pH change, often referred to as "color-changing tea" or "magic tea."

Its applications in food and beverages are very extensive, including:

Brewing it into Butterfly Pea Flower Tea/Blue Tea

Using it to color rice (such as Thai blue rice, Nyonya rice dumplings, Nasi Kerabu)

Making hand-shaken drinks, cocktails, desserts, jellies, cakes, etc., adding visual appeal
