Poivrade artichoke (also known as baby purple artichoke or petite artichoke Poivrade) is a small, early-season variety of artichoke originating from the Mediterranean regions of France, particularly Provence and Brittany.
Typically measuring only 4–6 cm in diameter, it features a striking deep purple color from stem to bracts. Unlike larger artichokes, Poivrade heads are almost entirely edible with little to no fuzzy choke inside, offering a tender, delicate texture and a subtle nutty-sweet flavor without bitterness.
Due to its limited harvest window (mainly late spring to early summer) and low yield, it is considered a premium, seasonal delicacy.
