Yellow zucchini is a long and slightly fat vegetable, also known as squash. Yellow variant has comparatively softer flesh and tastes sweeter than the green one.

Benefits
  • Zucchinis are rich in vitamin A, magnesium, folate, potassium, copper, and phosphorus.
  • This summer squash also has a high content of omega-3 fatty acids, zinc, niacin, and protein.
  • Moreover, vitamin B1, vitamin B6, vitamin B2, and calcium in zucchini assures optimal health.

Storage and Uses
  1. Advisable to store Zucchini in perforated plastic bags inside a refrigerator drawer.
  2. Try not to keep this fruit stored for more than 3 days in the fridge as it can get damaged in overly cold temperatures.
  3. It can be lightly cooked and consumed with the peel as it contains beta-carotene and lutein.
  4. Chopped/ sliced zucchinis sauted in olive oil and sesame seeds make a tasty side dish.
  5. Chop it into stews and spaghetti dishes or add it as a topping on pizza.

Nutritional value: Zucchetti means "small pumpkin". She is native to the West Indies and Mexico. It didn't become more popular until 1970. The typical fruit stems are light green to dark green, and new varieties also have bright yellow or light green and pear-shaped. The taste of the flesh is very subtle, and the jade melon is a vegetable variety with high nutritional value. Jade jade melon is low in calories, low in fat, and high in potassium, protein and fiber.

Cooking method:Zucchini is suitable for cold dressing, boiling soup, and stir fry with meat or vegetables.


Special matters: Zucchini sometimes tastes bitter. Insufficient watering when dry can produce bitter cucurbitacin. Emerald melons should not be stored with tomatoes or fruits because the ethylene they release will quickly deteriorate. Fried Zucchini at high temperature easily releases carcinogens.


Why our zucchini are light green?

Zucchini has different variety. light green zucchini are very tender and their skin tends to be thinner, so they are easier to eat raw than other varieties. Although dark green varieties are the most commonly sold and grown in the U.S.


Another is not all varieties perform the same. Some are more productive than others, and some are more disease resistant and pest-resistant, when selecting zucchini varieties for our planting base, we sure to seek out disease and pest resistance whenever possible. Varieties with a high level of natural resistance often perform better and produce longer. That's why we use light green.
