During alcohol fermentation, the temperature is generally controlled at 18 to 25°C. In the natural fermentation process of fruit wine, its main role is the wild-type yeast attached to the fruit. During the fermentation process, as the alcohol content increases, the pigments of the fruit also enter the fermentation liquid, making the fruit wine take on the color of the fruit itself. In anoxic, acidic fermentation broth, yeast can grow and reproduce, while most other microorganisms are inhibited because they cannot adapt to this environment.
Fruit wine is an alcoholic beverage made from fermented plant fruits. It is the first wine that humans learned to brew. The most common raw material is grapes, which are made into wine. The Sumerians and ancient Egyptians were already making wine as early as 6,000 years ago. Others such as plums, apples, blackberries, yellow peels, etc. can also be made into wine.
Most of the monosaccharides in nature are found in various fruits, mainly glucose and fructose. Under suitable temperature and humidity conditions, the sugar in fruits can be fermented by microorganisms found in nature to produce alcohol.
Another way to make fruit wine is to mix the fruit directly into alcoholic beverages to make cocktails. Or the fruits are soaked in distilled liquor and then made into wine.
