Grimmway Farms, based around Bakersfield, California, is the largest carrot grower and shipper of this format; Bolthouse Farms is the other major producer. The category was created in the late 1980s by Mike Yurosek, who cut imperfect full-size carrots into two-inch pieces so they would not be discarded. Grimmway later took on the Bunny-Luv business. Fields are now planted densely with cut-and-peel varieties so the roots grow straight and even. Harvest machines lift them by the tops, top them, then the plant cuts, peels and tumbles them over an abrasive surface until the ends are rounded.

A true baby carrot is an immature or miniature root, such as Amsterdam Forcing, sold with its shape intact. A baby-cut carrot is a section of a larger root. Grimmway’s product is the second kind. Breeding has reduced the woody core, so the bite is more uniform than an old slicer carrot. Colour is bright orange from beta-carotene. Per 100 g, carrot is roughly 40 kcal, mostly water and natural sugars, with fibre, potassium and vitamin A activity; the peeled surface has no skin, so rinse only if the pack asks for it.
