🌱 About the Producer:
France boasts over 1,200 (some sources even claim nearly 1,600) different varieties of cheese, making it one of the world's most diverse cheese-producing countries. Former French President Charles de Gaulle once humorously remarked, "How do you govern a country with hundreds of types of cheese?" This statement aptly captures the diversity and importance of French cheeses. These cheeses are primarily categorized into three types based on their milk source: cow's milk cheese (the most common, with a balanced and smooth flavor), sheep's milk cheese (rich and nutty), and goat's milk cheese (fresh and tangy when fresh, becoming more intense with aging). Famous examples include:
Brie: Melts in your mouth, creamy and delicate, often hailed as the "King of Cheeses."
Camembert: The most popular white mold soft cheese in France, with earthy and umami flavors.
Roquefort: A famous blue sheep's milk cheese, with a strong and spicy flavor.
Comté: A semi-hard cow's milk cheese, with nutty and fruity aromas, suitable for beginners.
In France, cheese is more than just food; it's a core part of social life, often paired with red wine, bread, and fruit, becoming the soul of the meal. Many cheeses are certified with AOP (Protected Designation of Origin), emphasizing traditional handcrafting and regional terroir.

Cheese Type: Uncooked, Pressed
From the scrublands and foothills of Savoie, this Tommette de Chèvre Fermière is a raw goat’s milk medallion with a wrinkled, ash-kissed rind. Maison Paccard’s affinage respects its rustic, lively soul: the paste is dense, chalky at heart, yet melts slowly into a herbaceous, lemony cream. No added binders—just farmstead milk and patient turning on spruce boards.
Under Paccard’s care, the fermier tang sharpens into wild mint, hazelnut, and dried hay, while the crust stays rough and mottled—a badge of honest cellaring. This tommette is small, humble, and hand-salted, with an uneven, natural bloom that speaks of mountain humidity and slow breathing. Rusticity here is not a flaw but a flavor: barnyard, straw, and fresh goat.
Crumble over roasted beets or warm gently on bread. The affinage by Maison Paccard never polishes away the goat’s wild heart. Each bite is a rustic, tangy poem: earthy, bright, and unapologetically fermière. A true Savoie rarity in goat’s milk.
