Summer savory is tender and best used fresh in season. Winter savory is woodier, more pungent, and available much of the year from a perennial plant. Both like full sun and sharp drainage.
Flavor and uses
Peppery, warm and slightly biting—use sparingly. Traditional pairings:
Add fresh leaves near the end of cooking; dried leaves can go in earlier in stews. It also appears in herbes de Provence and some regional spice blends.
Storage
Keep fresh sprigs refrigerated for a few days. Dried leaves last months in an airtight jar away from light, though aroma fades. Winter savory grows well in pots if the mix drains freely.
Note
Culinary use means the leaves, not the essential oil. Compared with thyme, savory is spicier and less citrusy.
