🛍 Product Information :
This fish is highly prized for its tender, snow-white, delicate flesh with a naturally sweet flavor and relatively few bones. The "salted fresh" (鹹鮮) technique involves lightly rubbing the fish with coarse sea salt and letting it cure briefly (1–2 hours or overnight) to draw out excess moisture, intensify its umami and natural sweetness, while keeping the texture juicy and tender — unlike heavily salted dried fish.
It is most commonly steamed with ginger and spring onions (high heat for 8–12 minutes), but can also be pan-fried or used in soups. The result is succulent, flavorful fish with a perfect balance of gentle saltiness and freshness. It is a beloved comfort dish, especially during the peak season in spring and summer when the fish is at its fattest and sweetest.
