(White salsify, Tragopogon porrifolius, is less common but shares similar traits.) These roots feature a black outer skin that peels to reveal crisp white flesh, with a mild, slightly sweet, nutty flavor often compared to oysters, artichokes, asparagus, or Jerusalem artichokes—hence the nickname "oyster plant."
