Taro starch is made from the root and stem of the taro plant. It has a high starch content, a translucent and chewy texture, and a smooth, refreshing taste. It's suitable for making jelly, thickening sauces, stir-fries, or desserts. Its cooling properties make it suitable for summer use to clear heat and detoxify, for beauty and skin care, or as a hypoallergenic starch substitute.

Preparation Tips

Commercially available taro starch is a fine white powder. No special processing is required. Simply mix it with cold water and then add hot water to avoid clumping.

Suggested ratio: Powder: Water ≈ 1:3~1:4 (adjust the ratio depending on desired chewiness or smoothness).

Suitable for vegans, the elderly, children, or those with sensitive stomachs.

1. Classic Way to Enjoy:

Homemade Taro Jelly (A Summer Must-Make, Refreshing and Cooling)
Ingredients (Serves 2-3):

100g Taro Flour
300-400ml Water (divided into two portions)
A pinch of salt (optional)
Toppings: Coconut milk, brown sugar syrup, honey, mango/watermelon/grass jelly, shredded coconut, etc.

Instructions:

Put half of the water (about 150-200ml) in a bowl, add the taro flour, and stir with chopsticks or a whisk until a smooth, lump-free paste forms.

Bring the remaining water to a boil (add a pinch of salt for flavor).

Slowly pour the prepared taro flour paste into the boiling water, stirring constantly (using a wooden spoon or heat-resistant spatula), until it becomes a transparent, thick paste that clings to a spoon (about 1-2 minutes).

Immediately pour into a square container or bowl, smooth the surface, and let cool at room temperature or refrigerate for at least 2 hours until completely set. Remove from heat, cut into pieces/strips, and drizzle with brown sugar syrup, coconut milk, or garnish with fresh fruit.

Variations: Add coconut milk to make coconut-flavored jelly; or mix with grass jelly to make a two-tone jelly for even better cooling effects.

2. Simple Home-Style Recipe

Stir-fried Taro Noodles (or Vermicelli) with Garlic/Sausage (A Perfect accompaniment to rice)

Ingredients: 150g taro noodles, minced garlic, sausage/dried shrimp/shredded pork, celery, carrot, chopped green onions, oyster sauce, light soy sauce, oil.

Instructions:

First, make the jelly (as above), refrigerate until set, then cut into thick strips or thin slices (i.e., homemade taro vermicelli).

Heat oil in a pan and sauté minced garlic and sausage or dried shrimp until fragrant.

Add the chopped vegetables and stir-fry briefly.

Add the taro vermicelli and stir-fry over high heat for 1-2 minutes. Season with oyster sauce and light soy sauce, and sprinkle with chopped green onions.

The texture is chewy and not sticky, with a rich aroma.

Taro Flour Sweet Soup / Dessert (Sweet and Refreshing)

Ingredients: 50g taro flour, 300ml water or milk/coconut milk, appropriate amount of brown sugar/rock sugar, ginger slices or osmanthus flowers (optional).

Instructions:

Mix the taro flour with a small amount of cold water to form a paste.

Bring the remaining water to a boil, add sugar and ginger slices.

Slowly pour in the flour paste, stirring constantly until thick and transparent, cook for 1 minute.

Serves warm and comforting when hot, refreshing when cold.

3. Other Variations

  • Steamed Taro Flour Cake / Hand-Pulled Pancake: Add a little oil, salt, dried shrimp or Chinese sausage to the flour paste, steam for 20-30 minutes, cut into pieces and pan-fry into hand-pulled pancakes.
  • For Thickening: Use as a substitute for cornstarch or water chestnut flour for thickening sauces; the result is a clearer, more translucent sauce, suitable for sweet and sour pork ribs or stir-fried vegetables.
  • Cold Taro Flour Salad: Cut into strips and toss with shredded cucumber, minced garlic, balsamic vinegar, light soy sauce, and chili oil for a refreshing and appetizing flavor.
  • Taro Flour Egg Drop Soup: Pour the starch slurry into egg drop soup to create a smooth and tender egg custard.
  • Western Variations: Used to make puddings or clear jelly, offering a finer texture than tapioca flour.

Precautions:

Taro flour is cooling in nature and has a strong effect in clearing heat and promoting diuresis. Those with weak spleen and stomach, or prone to diarrhea, should not consume excessive amounts.

Diabetic patients should limit their intake due to the high starch content.

When making homemade taro flour, thorough filtering and sedimentation are necessary (let it stand for several hours and then discard the top layer of water) to ensure cleanliness.

When purchasing commercially available taro flour, choose pure flour that is white and free of impurities.

It can be combined with previously introduced ingredients such as arrowroot (for its nourishing properties), taro (for its fragrant and glutinous texture), or carrots to create even more variations.

タロイモ粉の甘いスープ/デザート(甘くてさっぱり)

材料:タロイモ粉50g、水または牛乳/ココナッツミルク300ml、黒糖/氷砂糖適量、生姜スライスまたはキンモクセイの花(お好みで)

作り方:

タロイモ粉を少量の冷水で溶いてペースト状にします。

残りの水を沸騰させ、砂糖と生姜スライスを加えます。

ペースト状にしたタロイモ粉を少しずつ加えながら、とろみがついて透明になるまで絶えずかき混ぜ、1分間煮ます。

3. その他のバリエーション

タロイモ粉の蒸しパンケーキ/手打ちパンケーキ:タロイモ粉ペーストに少量の油、塩、干しエビまたは中華ソーセージを加え、20~30分蒸します。その後、切り分けてフライパンで手打ちパンケーキに焼きます。
