Processing: Fully hydrogenated coconut oil is artificially hydrogenated, converting the liquid oil into a solid or semi-solid state, unlike naturally occurring oils. Currently available hydrogenated oils (partially or partially hydrogenated oils) contain trans fats, which are formed as a side effect of hydrogenating vegetable oils. Most researchers believe that these oils are harmful to human health and increase the risk of heart disease (such as myocardial infarction and arteriosclerosis) more than saturated fats.
How should we consider the choice of fully hydrogenated coconut oil?
Virgin coconut oil:
Although virgin coconut oil is also high in saturated fat (approximately 80-90%), it contains medium-chain fatty acids (MCTs), which are considered easier to digest and absorb than long-chain fatty acids and have fewer health risks than trans fats. However, moderate consumption is still recommended.
Avoid partially hydrogenated oils:
Because the incomplete (partial) hydrogenation process produces large amounts of trans fats, which are harmful to heart health, the Taiwan Food and Drug Administration banned the use of partially hydrogenated oils in food starting in 2018.
