Name and types
A French greengage group of Prunus domestica, named in the 16th century for Claude of France. Main types: Dorée/Verte (benchmark sweetness), Oullins (earlier, sharper), Bavay (later, larger), Althan (purple skin). Some lots carry Label Rouge.
Flavour and buying
Flesh stays green-gold even when ripe. Very high sugar, low acid, honey and faint almond notes. Must be picked ripe; it will not sweeten much after harvest. Bloom on the skin is natural. Choose intact fruit that yields slightly and smells sweet.
Use and storage
Best eaten out of hand. Excellent in jam, tarts, clafoutis and brandied fruit. Chill after ripening; use within a few days. Bruises easily. Provides fibre, potassium and antioxidants.
