Join us for a hands-on experience to craft your very own seasonal fruit wine using the freshest fruits of the moment, and learn the traditional art of making Hong Kong-style salted lemons!

In this workshop, you will:

  • Use seasonal fresh fruits (e.g., green plums, mangoes, pineapples, lychees — changes with the season) to learn natural fermentation techniques and brew your own fruit wine
  • Make authentic Hong Kong “salted lemons” (also known as salted lemon seven), mastering the salting and aging process — perfect for making salted lemon drinks, salted lemon honey, or even cooking
  • No prior experience needed — our instructor will guide you step-by-step
  • Take home everything you make on the day to continue fermenting/aging (ready to enjoy in about 1–3 months)

Perfect for DIY enthusiasts and those who love healthy, homemade beverages. Let’s capture the true taste of the season in every bottle!








Spring is always the most beautiful time for leafy vegetables. It is the beginning of spring after a severe cold. Vegetables are not as beautiful when there is rain in spring. Today there are watercress, kale, cabbage, lettuce, romaine lettuce, salad greens, lettuce, bean sprouts, and vegetables. Tomatoes, cherries, broccoli, broccoli florets, eggs, passion fruit, sweet potatoes, ginger, potatoes, carrots.

10:15–10:30 Opening & Objectives Know exactly what skills you’ll take home
10:30–11:00 Mini Theory Class + Q&A Fermentation basics, seasonal fruit selection, safety tips
11:00–11:30 Seasonal Fruit Wine Hands-on (30 min) Wash & prep fruit → sugar ratio → bottling → take home 1L
11:30–12:30 Break + Snacks + Tasting Taste last year’s fruit wine made by students
12:30–13:00 Salted Lemon Hands-on (30 min) Lemon prep → layering with salt → jarring → take home 1 large jar


13:30 Happy ending — go home with your creations!

Finished product: Students take it home to share with their families, and the teacher collects photos and highlights of the production for display purposes.

Farm Introduction:

Chiu Je's farm was originally located in Ping Long, Lam Tsuen, Tai Po. Chiu Je, who is a Tai Chi coach and cooking instructor, has changed the farmland from growing vegetables to processing crops in response to the weather conditions in recent years. In addition to selling at farmers' markets, they also organize different workshops.
