Origin & Appearance
Native to East and South Asia and long cultivated in Japan (especially Okinawa, as handama), Taiwan and southern China. The plant is easily grown from cuttings and thrives in Hong Kong’s climate. Distinctive two-tone leaves (green above, purple below) come from anthocyanins; stems may also show reddish tones. Do not confuse it with red amaranth (紅莧菜), which belongs to a different family.
Flavor & Texture
Young leaves are tender with a mild, slightly piney or nutty note. When briefly cooked the texture becomes silky; overcooking can make it slightly mucilaginous (similar to okra). The purple pigment lightly tints the dish.
Nutrition (typical per 100 g fresh)

• Iron ~4–6 mg
• Calcium ~120–140 mg
• High vitamin A / β-carotene (among the higher leafy greens)
• Potassium, magnesium, dietary fiber, vitamin C and anthocyanins
Plant iron absorption is improved when cooked with a little oil and vitamin C–rich foods. TCM describes it as sweet and cooling: used to cool blood, invigorate circulation, reduce swelling and support digestion.
Culinary Uses
• Classic: 麻油薑絲炒紅鳳菜 (sesame oil + ginger balances its cool nature and boosts carotenoid absorption)
• Light soups or egg-drop soups (add near the end)
• Quick garlic stir-fry
• Young leaves can be lightly blanched for salads
Best cooked briefly so color and nutrients stay intact.
Storage
Keep dry, loosely wrapped in the refrigerator. Use within 2–3 days; leaves wilt and darken if stored too long or wet.
Notes
The plant contains trace pyrrolizidine alkaloids. Ordinary meal-sized portions as part of a varied diet are widely regarded as acceptable; people with existing liver concerns or those planning very frequent large servings may wish to moderate intake. Cooking thoroughly is recommended.
