1. Classic Steamed Alaska Cod with Ginger & Soy (清蒸鱈魚)
Serves: 2–4 | Prep Time: 10 mins | Cook Time: 12–15 mins
Ingredients:
- 400–500g Alaska frozen cod fillets (thawed)
- 4–5 slices ginger
- 2 stalks spring onion (white part for steaming, green for garnish)
- 2 tbsp light soy sauce
- 1 tbsp Shaoxing wine (optional)
- 1 tsp sesame oil
- 2 tbsp hot oil (for final pour)
- Fresh coriander for garnish
Steps:
Pat thawed cod dry. Place on a heat-proof plate with ginger slices and white spring onion underneath and on top.
Drizzle with Shaoxing wine and a little soy sauce.
Steam over high heat for 10–12 minutes (until fish flakes easily).
Discard steaming aromatics. Pour light soy sauce and sesame oil over the fish.
Heat 2 tbsp oil until smoking, pour over the fish to release aroma. Garnish with green onion and coriander.

- Juice & zest of 1 lemon

- Fresh parsley, chopped
Steps:
Pat cod very dry, season both sides with salt and pepper.
Heat oil in a non-stick pan over medium-high heat. Sear cod 3–4 minutes per side until golden and cooked through. Remove and set aside.
In the same pan, sauté garlic until fragrant, add lemon juice, zest and butter. Simmer until slightly thickened.
Pour sauce over cod and sprinkle with parsley.

Coat cod in flour → egg → panko.
