Brand and variety
Mouneyrac selects French pome fruit. Conference was bred in England in 1885 by Thomas Rivers and named after a prize at the National British Pear Conference. It is now a leading European autumn pear. In France it is grown in the Loire, northern Picardy and the Alps; Savoie fruit holds a PGI.
Ripeness and storage
Good to eat from firm-crisp through fully melting. Harvest is mid-September to October; cool storage extends supply into winter. Ripen at room temperature until the neck yields. Keep ripe fruit chilled and separate from high-ethylene produce.
Uses
Excellent raw, with Brie or Comté, and in tarts, poaching and compote. The flesh holds reasonably well when cooked. Modest calories; useful fibre and potassium.
