Ingredients
Chicken and Marinade:
- Boneless chicken breast or thigh meat: 500g (cut into 2-3cm bite-sized cubes)
- Salt: 1 tsp
- Red chili powder (or chili flakes): 1-2 tsp (adjust to taste)
- Black pepper powder: 1 tsp
- Minced garlic + minced ginger: 1 tsp each (or 1 tbsp garlic and ginger sauce)
- Soy sauce: 1 tbsp
- White vinegar or lemon juice: 1 tbsp
- Yogurt (plain, optional): 2 tbsp (for tenderizing the chicken)
- Tika masala powder or mixed curry powder (optional): 1 tsp (for adding an Indian flavor)
Double Coating (Key to a Double Crispy Crust):
All-purpose flour: 1 cup (approx. 120-150g)
Cornflour/Cornstarch: ½ Cup (for a crispier outer layer)
Salt: ½ teaspoon
Black pepper: ½ teaspoon
Red chili powder: ½ teaspoon
Baking powder (optional): ¼ teaspoon (for added fluffiness)
Other:
Ice water or cold water: 1 bowl (for the second coating)
Frying oil: Sufficient (vegetable oil or rapeseed oil)
Instructions
Marinate the chicken
Place the chopped chicken pieces in a large bowl and add all the marinade ingredients (salt, chili powder, black pepper, minced garlic and ginger, soy sauce, white vinegar, yogurt). Mix well, cover with plastic wrap, and marinate in the refrigerator for at least 1 hour (ideally 2-4 hours or overnight for better flavor).
Prepare the coating
In another large bowl, combine all-purpose flour, cornstarch, salt, black pepper, red chili powder, and baking powder. Mix well and set aside.
Coating process (double crispy coating)
Remove the marinated chicken from the refrigerator (do not drain completely; leave a little moisture).
First, place the chicken pieces in a bowl of dry flour, coating them evenly. Gently shake off any excess flour.
Next, quickly dip the flour-coated chicken pieces into ice water (or cold water) to slightly moisten the surface.
Then, coat them a second time in the dry flour, pressing firmly to create a thicker layer and an irregular, crispy texture.
After coating all the chicken pieces, let them rest on a plate for 5-10 minutes to allow the flour layer to set slightly.
Frying: Pour enough oil into a pan (enough to cover the chicken pieces) and heat over medium-high heat to 170-180°C (test by inserting chopsticks; small bubbles should appear).
Add the chicken pieces in batches (don't add too many at once to avoid lowering the oil temperature). Fry over medium-low heat for 3-4 minutes until golden brown and set.
Turn up the heat to high and fry for another 1-2 minutes to make the skin even more golden and crispy.
Remove from the oil and drain on paper towels.
Done! Serve hot! Sprinkle with a little chaat masala (Indian spice powder, optional) for added flavor.

Tips (For a Crisperier and More Successful Results)
Corn flour is key; it makes the outer layer incredibly crispy.
Double coating + low-temperature followed by high-temperature frying are the most important techniques for achieving a "crispy" crust.
Chicken thighs are more tender and juicy than chicken breasts; choose thighs if you're worried about them being dry.
For a healthier option, use an air fryer: air fry at 180°C for 12-15 minutes, flipping halfway through and brushing with a little oil.
Freezing Storage: Coated but unfried chicken pieces can be frozen. When you want to eat them, fry them directly from the freezer (the frying time will be slightly longer).
