Chicken Shami Kabab is a soft, tender, and flavorful minced chicken patty that originates from the rich Mughlai cuisine of the Indian subcontinent, particularly popular in North India and Pakistan. Unlike seekh kebabs, Shami Kababs are shaped into flat, round patties rather than skewered. They are made by cooking minced chicken together with chana dal (split Bengal gram), onions, ginger, garlic, green chilies, and a blend of whole and ground spices such as cinnamon, cloves, cardamom, cumin, and red chili powder. The mixture is slow-cooked until the lentils and chicken become soft, then ground into a smooth paste, mixed with fresh coriander and mint, and formed into patties.
The kababs are shallow-fried until they develop a crispy golden-brown crust while remaining melt-in-the-mouth soft inside. Cooking Instructions
· Adjust heating times according to appliances and utensils
· Do not defrost product before frying,
Shallow Frying
· Preheat oil in a skillet pan for shallow frying on medium heat.
· Shallow fry chicken Shami on medium heat for 2-3 minutes or until brown by turning occasionally.
Deep Frying:
· Preheat oil to frying temperature (170 °C -180C) in a frying pan/Karahi (wok).
· Deep fry frozen Shami Kabab for 2-3 minutes or until golden brown.
· For better product appeal and taste, deep frying without egg is recommended
