The FMO Fishery Products Processing Centre promotes local high-quality fishery products through the establishment of the FMO's brand new "Local Premium Fresh" brand. The FMO and the AFCD have cooperated to promote the local "Quality Fish Farm Project", and through the Fishery Products Processing Centre, the fishery products of the project, including: aconite, mussel and gem fish, etc., among which gem fish are fishery protection The high-quality GemFish introduced by the Department from Australia has been on the market since 2006, and greatly supported.

Local Quick-Frozen Jade Perch (Scortum barcoo), also known as Australian Jade Perch, is a high-quality freshwater fish farmed in Hong Kong. It features a silvery body with distinctive black gem-like spots, firm yet tender flesh with few bones, and notably high levels of Omega-3 unsaturated fatty acids. Quick-frozen after local processing for convenience and freshness, it is ideal for steaming, pan-frying or braising.
On the packaging of this product, you will see a traceability label with a QR code and the "Fresh Hong Kong Products" brand logo. Scanning the QR code will allow you to access detailed traceability information, including the place of origin, certification status, and supplier information.
English Name: Jade Perch, Australian Jade Perch
Body shape: Spindle-shaped, laterally compressed, with a back that gradually arches from behind the eyes, and a short, laterally compressed caudal peduncle. Body color: Silvery-white with varying sizes of shiny black oval spots on the sides, resembling black gems embedded in the fish, hence the name. Omnivorous freshwater fish, fast-growing, tolerant of low dissolved oxygen levels, and highly disease-resistant.
Origin and Aquaculture: Native to the freshwater basins of Queensland, Australia, it is one of the important edible freshwater fish in the region. Introduced by the Hong Kong Agriculture, Fisheries and Conservation Department around 2002, it was promoted for trial farming by local fish farmers and has now become an important species under the "Quality Fish Farm" scheme. Locally farmed in fishponds in the New Territories (such as Kam Tin), some fish farms use organic or probiotic water purification methods, emphasizing the absence of added drugs and hormones, and using high-quality feed to reduce muddy taste and increase fish oil content. Flash-frozen versions are typically locally slaughtered, scaled, and gutted before being rapidly frozen for easy storage and transportation.
Meat Texture and Flavor: Plenty of meat with few bones, the flesh is delicate, springy, firm yet not dry, with a sweet and rich fish oil. Under good farming conditions, it has almost no noticeable muddy taste, and its texture is close to that of high-quality saltwater fish. Steaming preserves its original sweet flavor, while pan-frying brings out the aroma of the fish oil. Some premium versions claim Omega-3 content several times that of salmon or comparable to red snapper and grouper.

Cooking Suggestions
Steaming: Highly recommended. Make a few slits in the fish, place ginger and scallions at the bottom, and steam over high heat for 7-10 minutes (depending on size). Drizzle with hot oil and soy sauce to retain the fish's sweetness and oily aroma.
Pan-frying: Golden brown on the outside, tender on the inside. Serves with minced garlic or simple salt and pepper.
Braised or Sweet & Sour: Pan-fried until fragrant, then simmered to infuse flavor. Suitable for everyday cooking.
Other: Can also be used in soups, steamed with dried tangerine peel, or braised in tomato sauce.
Common size: Approximately 200-600 grams per fish, suitable for family consumption.
Purchase and Storage: Choose products with a "Quality Fish Farm" label or clearly indicating local origin for better quality assurance. Frozen fish should be kept sealed and stored below -18°C. Thawing is recommended to be done slowly in the refrigerator or rinsed in the packaging under running cold water to avoid affecting the texture of the fish. Cook as soon as possible after thawing; do not refrozen.

How to Cook
Steamed Ginger and Scallion Jade Fish
Ingredients: 1 local high-quality frozen jade fish, 5-6 slices of ginger (some shredded), 2 scallions (shredded), 2 tablespoons light soy sauce, ½ teaspoon sugar, 1 teaspoon sesame oil, 1 tablespoon cooking oil, appropriate amount of boiling water
Steps:
1. Thoroughly thaw the jade fish and clean it. Pat it dry with kitchen paper. Make three diagonal cuts on both sides of the fish.
2. Place ginger slices on a plate, then place the jade fish on top. Spread some shredded ginger on top of the fish.
3. Bring water to a boil in a steamer and steam over high heat for about 5-8 minutes (until a chopstick can easily pierce the fish).
4. While steaming, mix the light soy sauce, sugar, and sesame oil to make a sauce.
5. Remove the steamed fish, drain any excess sauce, and top with shredded scallions and the remaining shredded ginger.
6. Heat the cooking oil until it just starts to smoke, then drizzle it evenly over the scallions. Finally, pour the sauce over the fish.
薑蔥蒸寶石魚
材料:本地優質速凍寶石魚 1條、薑 5-6片(部分切絲)、蔥 2條(切絲)、生抽 2湯匙、砂糖 ½茶匙、麻油 1茶匙、食用油 1湯匙、滾水適量
步驟:
1. 將寶石魚徹底解凍後清洗,用廚房紙吸乾水分,在魚身兩面斜切三刀
2. 碟上放薑片墊底,放上寶石魚,魚面鋪上部分薑絲
3. 蒸鍋加水煮沸,大火蒸約5-8分鐘(以筷子能穿透魚肉為準)
4. 蒸煮期間將生抽、砂糖及麻油混合成醬汁
5. 取出蒸好的魚,倒去多餘魚汁,鋪上蔥絲及剩餘薑絲
6. 將食用油燒熱至微煙,均勻淋在蔥絲上,最後淋上醬汁即可
