Tilapia has been an important food source since ancient times. Artwork from the late Eighteenth Dynasty of Egypt, around 1350 BC, demonstrates its importance in Egypt. Nile tilapia (Oreochromis niloticus) is endemic to the region and is farmed in enclosed ponds along the Nile River.

Tilapia was introduced to Tamil Nadu, India in the 1950s as an inexpensive source of protein. Due to its ability to survive in polluted, low-oxygen environments, it quickly spread in the state's freshwater bodies.

The Fisheries Research Committee recommends that the fish be farmed only on the western slopes of the Western Ghats, along the coastal areas south of Cape Comorin (excluding the Tapti River), and in the areas south of Tirunelveli, Madurai, and Ramnad in Madras (including the Waige River). The Committee recommends further investigation to study the feasibility of farming tilapia in other parts of India.

Whole tilapia can be processed into skinless and boneless fillets. Reports indicate that in some commercial species, the yield can reach 47% of the harvest weight.

Tilapia is a commercially valuable aquaculture species, but it is also prone to developing off-flavors (other species susceptible to off-flavors include trout, barramundi, and spotted catfish). These "muddy" or "musty" smells are typically caused by geosmin and 2-methylisoborneol, organic byproducts of ubiquitous cyanobacteria, which are frequently found in water and soil, or occasionally proliferate in large numbers. These off-flavors do not indicate the freshness or safety of the fish, but they do reduce its appeal to consumers. Simple quality control procedures have proven effective in ensuring the quality of fish entering the market.

Tilapia is very low in mercury. It is low in saturated fat, calories, carbohydrates, and sodium, and is a good source of protein. It also contains micronutrients such as phosphorus, niacin, selenium, vitamin B12, and potassium.

The nutritional value of tilapia may be lower than commonly perceived. Tilapia typically has a much lower omega-3 fatty acid content than other common edible fish, but an unusually high omega-6 fatty acid content. Multiple studies have evaluated the effects of adding flaxseed derivatives (a plant source rich in omega-3 fatty acids) to farmed tilapia feed. These studies found that tilapia fed this diet showed increased levels of ALA, an omega-3 fatty acid commonly found in flaxseed, as well as two fatty acids (DHA and EPA) almost exclusively found in animal sources. Based on these findings, tilapia farming techniques can be adjusted to address concerns about the fish's nutritional value while retaining its advantage as an omnivorous fish capable of consuming economical and environmentally friendly plant protein. Suitable feeds for salmon and other carnivorous fish can also be formulated using protein sources such as soybeans, although soybean-based feeds with added soybean oil may alter the balance between omega-6 and omega-3 fatty acids.

Cooking Methods

"St. Peter's Fish," caught in the Sea of ​​Galilee, is served at a restaurant in Tiberias, Israel. Tilapia is popular in Chinese households and is often prepared in a style similar to braised carp. A typical method for braised tilapia is to first pan-fry it in a skillet until both sides are slightly golden brown, then add two tablespoons of soy sauce, along with scallions, ginger, sugar, vinegar, and rice wine. Currently, the main export product from Taiwanese fish farms is the all-male red tilapia strain. These are raised in seawater or brackish water (freshwater fish often have problems with parasites, a muddy taste, and pollution). They are deboned and skinned using automated production lines, aseptically cleaned, and vacuum-packed for rapid freezing, producing high-quality sashimi. These products have received certifications from domestic and international organizations for marketing purposes. Therefore, sashimi products called "Taiwanese tilapia" are commonly seen in Japanese restaurants and sushi restaurants in Taiwan.
