Key Features
Production Method: The most crucial feature is the use of a thick bamboo pole as a dough-pressing tool. The craftsman sits at one end of the pole, repeatedly pressing the dough with his body weight to make it more firm.
Dough Ingredients: Traditionally, the ingredients are high-gluten flour, duck eggs, and alkaline water. Whole eggs can also be used. Duck eggs give the noodles more elasticity and color, while alkaline water adds a refreshing texture.
Noodle Texture: After being pressed with the bamboo pole, the noodles have a high density, resulting in a particularly smooth, chewy texture with a rich egg flavor.
Soup Base and Toppings: Often paired with wontons, and served in a flavorful broth made from pork bones, dried flounder, and shrimp roe, it can also be served as a lo mein (dry noodle).
Craftsmanship Preservation: Due to the time-consuming and skill-required production process, hand-pressed bamboo noodles have gradually declined and have been replaced by machine-made noodles. In 2014, the Hong Kong government inscribed "Noodle-Making Technique" on the Hong Kong Intangible Cultural Heritage List to preserve this traditional craft.

重點:
1. 在熱水用筷子快速讓開個麵。
2. 要好似麥文記麥奀記嘅效果,中火煮2至3分鐘,水多一點,大滾水,這個面適合快煮,水滾後落麵,此麵餅屬於手工麵,表面沾上麵粉,可放多一點水,不用過冷河。
香港雲吞麵(竹升麵)煮食方法:
湯麵:
撕開醬包放入碗中,倒入300毫升沸水攪勻備用。
Soup noodle : Tear open the sauce packet and put it into a bowl, pour in 300ml of
boiling water, mix well and set aside."
滾水下麵中火煮2-4分鐘,期間要用筷子讓開打開麵餅,撈起麵條放入準備好的高湯碗中,即可食用。
不需要過冷河、煮麵湯可以加落碗內。
Cook around 2-4 minutes in boiling water.
In between, use chopstick to open the noodle in the hot water and stir quickly.
Remove the noodles from the pot, place them in a bowl and serve (soup noodle).
