Founded by Hong Kong's post-80s generation of seafood aquaculture enthusiasts, Hong Kong Aquaculture Innovation has been committed to leading the future of sustainable seafood farming since 2022. We own three aquaculture farms in Hong Kong, including Hong Kong Mirs Bay South, Yim Tin Tsai West, and Sham Wan in Sai Kung. We focus on gradually modernizing our operations to provide fresh, high-quality, certified, and traceable fish products to meet the growing market demand. While enjoying delicious seafood, the public can also feel the commitment to safety and environmental protection, and practice sustainable development through deep-sea aquaculture.
Hong Kong Aquaculture Innovation owns an aquaculture base in the Mirs Bay (South) Fish Culture Zone. This location recognized as a national-level beautiful bay case. This clear and beautiful marine area will be the ideal place for us to culti- vate safe, and high-quality fish. They stocked fish fry in April 2026.
🛍 Product Information :
Gilthead Seabream (Sparus aurata), also known as Gilt-head bream, Dorade, or Atlantic seabream (金頭鯛 in Chinese), is a prized sparid fish. It features a silvery body with a distinctive golden band between the eyes (hence “gilt-head”). The flesh is firm, white, mildly sweet, and moderately fatty with relatively few bones. Primarily from the Mediterranean and eastern Atlantic, most market supply now comes from aquaculture in Greece, Turkey, Spain and other Mediterranean countries. Excellent for steaming, pan-frying, grilling or baking.
Flavor and Texture: The flesh is firm, tender, and has few bones. The flavor is mild and sweet, not overpowering, with a moderate amount of fat (a layer of fat between the skin and flesh, resulting in a crispy skin and tender flesh after pan-frying or grilling). It is milder than red sea bream, making it suitable for diners who prefer a lighter, whiter fish. When fresh, it can be eaten raw and retains its good texture even after cooking.
Nutritional Value: A high-protein, low- to medium-fat white fish. Per 100g:
Protein 18–20g
Fat 2–5g (containing EPA, DHA, and other Omega-3s)
Energy 96–120 kcal
Rich in Vitamin B12, Vitamin D, selenium, phosphorus, potassium, etc.
Helps maintain muscle, cardiovascular health, and immune function, making it an excellent choice for a healthy daily diet.
Cooking Suggestions:
Steaming: Whole fish or fillet, with ginger, scallions, and soy sauce to highlight its natural sweetness (common in Hong Kong restaurants). Pan-fry/Roast: Pan-fry skin-side down until golden brown and crispy, or roast whole, served with lemon, herbs, and olive oil.
Mediterranean Style: Baked with tomatoes, olives, garlic, and potatoes.
Other: Braised, used in soups, or prepared as a Western-style herb-roasted fish.
Be careful not to overcook, as this can dry out the flesh or make the skin too tough.
