We own three aquaculture farms in Hong Kong, including Hong Kong Mirs Bay South, Yim Tin Tsai West, and Sham Wan in Sai Kung. We focus on gradually modernizing our operations to provide fresh, high-quality, certified, and traceable fish products to meet the growing market demand. Hong Kong Aquaculture Innovation owns an aquaculture base in the Mirs Bay (South) Fish Culture Zone. This location recognized as a national-level beautiful bay case. This clear and beautiful marine area will be the ideal place for us to culti- vate safe, and high-quality fish. They stocked fish fry in April 2026.

Scientific Name and Other Names
Scientific Name: *Rachycentron canadum* (the only extant species in the family Rachycentronidae).
Hong Kong Common Names: Fish Chung, Mengzai Fish, Mengzhong ; 魚仲、懵仔魚、懵仲。
Other Names: Sea Li, Sergeant Fish, etc. Common English Names: Cobia, Black Kingfish, Sergeant Fish, etc.
Appearance and Characteristics: Elongated, nearly cylindrical body; flat, broad head; wide mouth; dark brown back; often with silver longitudinal stripes on the sides; yellowish belly. The anterior dorsal fin has a separate short spine; the caudal fin is deeply concave. It can grow to about 2 meters in length and weigh over 60 kilograms. It is usually sold as a medium-sized fish or as a fish fillet. Juveniles closely resemble remoras (long-tailed remoras) and often follow larger fish.
Distribution and Origin: Widely distributed in tropical to subtropical seas worldwide (except the eastern Pacific Ocean), including Hong Kong, Taiwan, coastal China, and the Indian Ocean to the Atlantic Ocean. In the wild, it is a migratory carnivorous fish, feeding on fish and crustaceans. Fish fillets from local premium fish farms (certified by the Agriculture, Fisheries and Conservation Department's "Quality Fish Farm Scheme") are commonly found in Hong Kong markets. They are often sold as frozen fish fillets (approximately 300g/pack), emphasizing hygiene, quality, and low-carbon local production.
Flavor and Texture: The flesh is plump, firm, and elastic. The fillets are thick with well-distributed fat (especially in the belly), offering a sweet and naturally oily aroma, and few bones. While there is a slight difference in texture between farmed and wild-caught fish, it is suitable for various cooking methods and does not easily fall apart. Some have compared its texture to certain high-grade white-fleshed fish.
Nutritional Value: Rich in high-quality protein, EPA, DHA (which aids brain and vision development and has anticoagulant benefits), and vitamin E. It has a high meat content, with many edible parts (over 60%). The skin is rich in collagen, and the liver and intestines can also be used in cooking.
Cooking Suggestions:
Simple Pan-frying: Season with a little salt, fish sauce, or pepper, and pan-fry until golden brown to bring out the oil and crispiness.
Steaming: Can be added with dried tangerine peel to retain freshness.
Braising or simmering: Pairs well with pickled mustard greens, black pepper, herbs, ginger, and garlic.
Other: Fish fillets can be pan-fried, belly is suitable for grilling or steaming, fish skin can be used in cold dishes, and fish heads/bones can be used to make soup.
Local premium fish fillets and fish steaks are especially convenient for quick family cooking.
Storage: Frozen products are recommended for freezing and cooking as soon as possible after thawing. Fresh fish should be refrigerated and processed as soon as possible.
Hong Kong Market Characteristics: Fish fillets are commonly found in Hong Kong markets, supermarkets, and local fish and vegetable direct delivery channels, especially products from the "Quality Fish Farm Scheme," which emphasizes safety, quality, and support for local aquaculture. While not the most expensive fish, it is popular due to its excellent meat quality and high nutritional value.
