Grown through a unique forcing process in complete darkness, it develops tightly packed, elegant spindle- or cylinder-shaped heads with crisp white leaves tipped in pale yellow. The flavour is refined — a gentle bitterness balanced by subtle sweetness and nutty notes. Raw, it offers a satisfying crunch; cooked, it becomes tender and mellow.
Highly versatile in French cuisine: excellent raw in salads (paired with blue cheese, walnuts, apples or smoked duck), braised, sautéed, or as the star of the classic Endives au jambon (baked with ham and béchamel). Low in calories and rich in fibre, vitamin K, folate and potassium, it is a winter favourite on French tables.
