【Anti-cancer mechanism】
Kadashi of the National Institute of Genetics in Japan added 1 part of nitrosamine to 10 parts of vegetable juice and studied 100 kinds of vegetables and fruits one by one. The results showed that radishes, turnips, etc. completely eliminated the mutagenicity of nitrosamine, and nitrosamines could be decomposed into non-carcinogens by radish juice. This may be because radishes and other vegetables contain some enzymes that can decompose nitrosamines. Monden from Israel proposed that radish contains indole substances, which may induce the activity of benzopyrene hydroxylase in the intestine and reduce the growth of animal tumor cells under experimental conditions.
