【Chemical composition】
It contains various alkaloids such as leuprorelin, stachydrine, solanine, choline, etc. The seeds contain the highest content of solanine, reaching 1.2%~1.5%. It also contains protein, fat, sugar, vitamins (B, C, E, P), carotene, potassium, copper, zinc, etc.

1. Mushroom and eggplant paste: 400 grams of tender eggplant, 30 grams of soaked mushrooms, finely minced ginger, cooking wine, sugar, soy sauce, MSG, starch, vegetarian soup, pepper, sesame oil, and peanut oil as appropriate. Peel the eggplant, wash it, cut it into shreds, and mix it with dry starch; remove the stems of the soaked mushrooms, wash it, cut it into shreds, and set aside; put peanut oil in a wok and heat it until it is half cooked, then add the eggplant shreds mixed with dry powder and fry until golden brown, then remove from the oil; leave some oil in the hot pan, add the fried eggplant and mushroom shreds, add minced ginger, cooking wine, soy sauce, sugar, and vegetarian soup, bring to a boil over high heat, simmer for 5 minutes over low heat, then turn to high heat and add MSG, thicken with wet starch, drizzle with sesame oil, remove from the heat and serve in soup containers.
