Fresh broad beans can be eaten as a vegetable and can be prepared in various ways, such as boiling, stir-frying, and making soup. In traditional Chinese medicine, broad beans are considered to be neutral in nature and sweet in taste, possessing the effects of benefiting the stomach, promoting diuresis and reducing swelling, stopping bleeding, and detoxifying.

ソラマメ(空豆、蚕豆、学名: Vicia faba)は、マメ科の一年草または越年草。別名、ノラマメ(野良豆)、ナツマメ(夏豆)、テンマメ(天豆)、シガツマメ(四月豆)、コヤマメ(高野豆)、トウマメ。

鮮度を保つため、茹でる直前にサヤから豆を出すようにする。「お歯黒」が緑色の若い豆は薄皮もやわらかく塩ゆでにするとよいが、黒くなった豆は「お歯黒」の部分がかたいため、取り除いてから塩ゆですると火の通りも早く味が良くなじむ。塩ゆでするときは、豆の薄皮に包丁で小さく切れ目を入れてから、好みの固さで茹であげたあと、ざるに広げて薄く塩を振ると水っぽさがとれる。薄皮に切れ目を入れることによって、茹で上げ後にしわが寄らないように仕上げることができる。沸騰した湯に少量の塩を入れ、豆を入れて2 - 5分ほどで茹でるが、新鮮なものほど早く茹であがるため、途中でかたさを見ながら茹で時間を調整する。

下茹で、あるいは油通しをしてから炒め物にしたり、揚げ物、煮物、スープなどに使われる。


Folate (26% DV) and dietary minerals such as manganese, phosphorus, magnesium, and iron (ranging from 52% to 77% DV) are fairly abundant. B vitamins are moderate to abundant (19% to 48% DV). Among other common pulse crops (such as chickpeas, peas, and lentils), broad beans have the highest protein to carbohydrate ratio. In addition, it is recommended to consume them together with grains, as these two foods complement each other in providing all the essential amino acids. 

Some people develop favism, a hemolytic reaction to eating fava beans that is associated with a metabolic disorder called G6PDD. Otherwise, the beans, with the outer seed coat removed, can be eaten raw or cooked. For young seed pods, the outer seed coat is edible, and for very young seed pods, the entire seed pod is edible.

Legumes often contain phytohemagglutinins, a type of lectin found naturally in plants, animals, and humans. Fava beans contain relatively low levels of toxins, and boiling the beans for just 10 minutes will destroy most of them.

Broad beans are rich in levodopa, so people taking irreversible monoamine oxidase inhibitors should avoid eating broad beans to prevent a pressor reaction.

Shelled broad beans and steamed

Broad beans are usually eaten when young and tender, and for plants grown under glass or overwintered in a protected location, harvesting can begin as early as mid-spring, but even main crops sown in early spring will not mature until mid-to-late summer. Horse beans are usually harvested in late fall when they are fully mature and eaten as legumes. The immature pods can also be eaten cooked, and the young leaves of the plant can be eaten raw or cooked and used as a pot herb (like spinach).

To prepare broad beans, you first need to remove them from their pods. You can then steam or boil the beans, either whole or parboil them to loosen the outer skin before removing it. The beans can be fried until the skins crack, then salted and/or spiced for a delicious, crunchy snack.

India
In India, people in the northeastern state of Manipur eat broad beans. They are known locally as hawai-amubi and are an ingredient in the dish eromba.

Italy
In Sardinia, broad beans are traditionally cooked in lard, often with bacon or minced pork instead of or in combination.

In Rome, broad beans are popular and may be cooked with guanciale or artichokes, served as a side dish with lamb or kid goat, or eaten raw with Pecorino Romano cheese. Fave e pecorino is a traditional dish for picnics on May 1st in Liguria, Tuscany, Marche, Umbria and Lazio.

In Sicily, maccu is a Sicilian soup made with fava beans as the main ingredient.

In Puglia, wild chicory and broad bean puree is a typical dish.

Japan
Broad beans, called soramame (Japanese: そら豆), literally meaning "sky beans," are eaten in a variety of ways in Japan. Most commonly, the beans are cooked and eaten directly or added to rice. It is also eaten as a popular snack "ikarimame" (Japanese: いかり豆), literally meaning: "anchor beans", in which the beans are roasted or fried.

Kusksu, Malta

Kusksu is a traditional Maltese soup made mainly from seasonal broad beans, small pasta beads and fresh ġbejniet. Although similar in shape, the small pasta beads locally known as kusksu look like couscous, but this couscous has a lighter, fluffier texture. In contrast, this soup gets its name from kusksu, a type of “mini pasta” that has a thick texture perfect for slow cooking.

They are the main ingredient in Maltese kusksu, a vegetable soup containing mainly broad beans and pasta beads. They are also used in an appetizer called bigilla, served in pureed form mixed with olive oil, lemon juice, garlic, parsley and mint. Serve with bread or crackers.

Mexico
In Mexico, broad beans are often used in a soup called sopa de habas, which means "broad bean soup." They can also be fried, pickled, and dried and eaten as a snack, either alone or with other pickled or dried beans and nuts.

Morocco
In Morocco, broad beans can be boiled, steamed, or made into tabiṣart, a dip sold on the streets and usually eaten in the winter.

Nepal
In Nepal, broad beans are called bakulla. While the pods are still tender, they can be eaten as a green vegetable, often sautéed with garlic. When dried, broad beans are eaten roasted or mixed with other legumes, such as mung beans, chickpeas, and peas, in a dish called qwati. The soaked and sprouted mixture is cooked into a soup and eaten with steamed or beaten rice on the occasion of the Hindu festival Janai Purnima, also known as Rakshya Bandhan. The dry fried version of qwati is called biraula. It is believed that qwati soup can help rejuvenate the body after being affected by the monsoon rice season.

Netherlands
In the Netherlands, they are traditionally eaten fresh with savory foods and some melted butter. The combination of beans and crispy fried bacon is also common. Rubbing the hairs inside the pods can be used as a folk remedy for warts.

Portugal

Broad beans (Portuguese: favas) are widely grown in Portugal and are popular throughout the country. The most popular dish prepared with broad beans is "favada," a stew of onions and pork—depending on the region, the pork could be chorizo, bacon, pork shoulder, spare ribs, or a combination of these. In Alentejo, lots of cilantro is added at the end. In addition to being fresh, broad beans can also be eaten dry or fried as an appetizer.
