Wolf's Paw Apple (also known as Patte de Loup, meaning "Wolf's Paw" in French) is a rare and ancient French heirloom apple variety, documented as far back as the Middle Ages and primarily grown in northwestern France (especially the Loire Valley and Maine-et-Loire regions).
The unusual name comes from the characteristic elongated scars or cracks that often appear on the skin during rapid growth, resembling claw marks left by a wolf. Legend even claims it was the favorite apple of Anne of Brittany, former Queen of France.
Unlike modern uniform, glossy commercial apples, Wolf's Paw fruits are small to medium in size, irregularly shaped (often lopsided, oblate, or asymmetrical), with rough, russeted, brownish-yellow to bronze or olive-green skin. The flesh is pale yellow to ivory with a green tinge, dense, crisp, juicy yet not overly watery, offering a beautifully balanced sweet-tart flavor with bright floral and fruity notes. When stored, it develops subtle, delicate hints of aniseed and lychee.
Highly valued by specialty growers, heritage enthusiasts, and chefs for its superior taste rather than appearance, Wolf's Paw apples are excellent eaten fresh (sliced by hand) and shine in cooked preparations like tarte Tatin or baked goods, where the firm texture holds up beautifully while the complex flavors deepen.
