Description

西洋菜味甘，性微寒。有清熱解毒、清燥潤肺、化痰止咳、利尿、鎮痛等療效。另亦含高量的類胡蘿蔔素和葉黃素，有強化視力的效果。

而其維生素C成分，則有助保護體內細胞免受自由基的破壞，具延緩衰老的作用。西洋菜食用部位為嫰葉、莖。清洗西洋菜經常發現水蛭附帶其上，必需要小心清洗。應先摘去根部，然後浸泡於鹽水中約 45 分鐘。

令內裡隱藏之水蛭蜷曲沉底，然後再用流水清洗數次。有機種植的西洋菜品種，則在水中稍加沖洗後即可。" 寒性咳嗽者忌食。體質屬虛寒者宜少食。

十字花科的多年生水生蔬菜，每年九月至十月農夫會利用嫩莖作扦插繁殖。菜味香，清甜，沒有「骨」（粗的纖維）。
