White onions are a cultivar of the common onion (Allium cepa), characterized by their bright white, papery skin and crisp, juicy, translucent white flesh. They have a milder, less pungent flavor compared to yellow or red onions, with higher sugar content and lower sulfur compounds, resulting in a sweeter, lighter taste and less eye irritation when chopped.
