Savoy cabbage is a winter vegetable and one of several cabbage varieties. It has crinkled, emerald green leaves, which are crunchy with a slightly elastic consistency on the palate.

Named after the Savoy region in France, it is also called cavolo di Milano or cavolo lombardo, and is named after Milan and its Lombardy region in Italy. Known varieties include 'Savoy King' (in the United States), 'Tundra' (green, hard, round heart), and 'Winter King' (with dark wrinkled leaves).

🥗 Usage:

Savoy cabbage has many uses. It pairs well with white wine, apples, spices, horseradish and meat. It can be used in meatloaf, stews and soups, such as borscht, or grilled and drizzled with olive oil. It can be used in pickled recipes such as sauerkraut or sauerkraut, or with strong and unusual seasonings such as juniper berries.
