Beauval artichoke, also known as the "Violet of Provence," is a unique variety native to the Mediterranean region of France. It is smaller and more slender than the common spherical artichoke, with tightly packed bracts that are purplish-green.
Poivrade artichoke (also known as baby purple artichoke or petite artichoke Poivrade) is a small, early-season variety of artichoke originating from the Mediterranean regions of France, particularly Provence and Brittany.
Typically measuring only 4–6 cm in diameter, it features a striking deep purple color from stem to bracts. Unlike larger artichokes, Poivrade heads are almost entirely edible with little to no fuzzy choke inside, offering a tender, delicate texture and a subtle nutty-sweet flavor without bitterness.
Due to its limited harvest window (mainly late spring to early summer) and low yield, it is considered a premium, seasonal delicacy. Chefs prize it for raw preparations in salads, quick blanching with olive oil, light sautéing, or grilling as an elegant appetizer or side dish—frequently appearing on Michelin-starred menus when in season.
Bauval artichokes are highly prized for their tender texture. The entire artichoke, including most of the stem, can be eaten when young and is less likely to cause cramping. Its flavor is rich, with a nutty aroma, slightly more intense than larger varieties.
This artichoke is particularly suitable for quick cooking. Whether pan-fried, roasted whole, or prepared using the Barrigoule method, it is ideal. Due to its small size, it is also excellent for marinating, preserving, or grilling.
