Passe Crassane Pear is a prestigious heirloom French winter pear variety, originating from Rouen, Normandy, developed around 1845 by nurseryman Louis Boisbunel and first fruited in 1855. Known as one of the true winter pears, it is harvested mature in autumn (around November) and requires cold storage for several months to ripen fully, making it available from late winter through early spring (typically December to March/April). Medium to large in size, the pear has a round to bulbous, sometimes irregular or slightly lumpy shape, with greenish-yellow to marbled yellow skin, thin and smooth.
The stem is characteristically dipped in bright red wax to preserve moisture. The flesh is white to ivory, firm and crisp when under-ripe, becoming succulent, juicy, and slightly grainy when fully ripe. It offers a complex, aromatic profile—floral and fruity with sweet-tart, vinous notes and excellent balance. Highly prized for fresh eating, its melting texture and rich flavor also make it superb for cooking or desserts. A seasonal specialty, Passe Crassane is celebrated for its elegance and depth among pear enthusiasts.
