Hon-Shimeji Mushroom (also known as Matsumoto Mushroom, Jade Mushroom, or Lyophyllum shimeji) is a premium Japanese edible mushroom, originally wild and extremely rare, praised in Japanese proverb as having the best flavor among mushrooms ("Aji shimeji" – superior taste to matsutake's aroma). Through advanced cultivation technology from Japan, it's now mass-produced in Hong Kong, available year-round. Features plump white stems with light brown caps, clustered growth, and a crisp, juicy texture with intense umami and nutty fragrance.
