Unlike the common triangular Cantonese zongzi, Hakka pillow zongzi is wrapped using a special technique: the glutinous rice is placed in the center first and then folded from both sides, resulting in a plump and firm shape. The classic filling is simple yet flavorful — peanuts, dried shallots, and dried shrimp — creating a savory and aromatic taste. The glutinous rice is often left unseasoned or lightly seasoned to preserve its natural fragrance.
Wrapped in bamboo leaves and steamed or boiled, these zongzi have a chewy, satisfying texture with the crunch of peanuts and umami from the shrimp. It represents the humble, hearty spirit of Hakka cuisine and is a beloved heritage food, particularly those passed down from Hakka women in places like Sha Tau Kok.
