🌱 Producer introduction : Jack Pong, the third-generation descendant of Yuet Wo Sauce Garden, recalled the story of his grandfather. In the 1930s, he came to Hong Kong with the same sauce making technology, and took root in Tsuen Wan. With the rise of the catering industry, Yuet Wo also began to supply restaurants in Tsuen Wan. Therefore, a factory was set up on Texaco Road in Tsuen Wan, and the neighborhood was also mainly in the area. Yu moved the sauce garden to Gudong in 1971. Because the Gudong is flat and wide, there are no barriers in all directions, and the sunshine time is very sufficient, which is very suitable for the production of soy sauce. There are still four time-honored sauce gardens settled here. Yuet Wo has been using non-genetically modified Canadian soybeans since then, and has used traditional ancient methods to brew soy sauce. Naturally sun-dried soy sauce has a delicious flavor that cannot be replaced by chemically synthesized soy sauce. It has always only focused on serving Hong Kong. Yuet Wo is the only sauce garden in Hong Kong that uses its own rice wine to ferment into vinegar. Production method :
- Rinse the green plums first, without removing the core, dry the surface moisture, and then remove the stalks of the green plums.
- Prick a few small holes in the green plums to help them taste.
- Use a wide-mouth, transparent and sealable glass container to put green plums and rock sugar.
- Then add Yuehe Chunjiu rice wine until it covers the plums and rock sugar. It can be added up to 80 to 90% of the height of the glass container, and you need to leave room for fermentation.
- Seal the glass container, indicate the date of manufacture, and the amount of the ingredients. Place it in a cool and dry place. Shake the bottle every few days until the rock sugar is completely dissolved. After about three months, it will turn into a bottle of homemade plum wine with fragrant, sweet and sour taste .
Tips:
- Generally, plum wine can be used after soaking for about three months, but the longer it is stored and fermented, the more mellow the flavor will be.
- If you choose yellower and riper plums, the brewed plum wine will have a darker color and a stronger aroma. If you choose greener and hard plums, the brewed plum wine will have a clearer color and a heavier sour taste.
- Plum wine can be used to adjust various specialty drinks and desserts. Drink in moderation, strengthen the spleen and appetizers, eliminate fatigue and other therapeutic effects.
- Before using the container, be sure to scald it with boiling water and dry it to achieve disinfection.
