🌱 Producer introduction : Jack Pong, the third-generation descendant of Yuet Wo Sauce Garden, recalled the story of his grandfather. In the 1930s, he came to Hong Kong with the same sauce making technology, and took root in Tsuen Wan. With the rise of the catering industry, Yuet Wo also began to supply restaurants in Tsuen Wan. Therefore, a factory was set up on Texaco Road in Tsuen Wan, and the neighborhood was also mainly in the area. Yu moved the sauce garden to Gudong in 1971. Because the Gudong is flat and wide, there are no barriers in all directions, and the sunshine time is very sufficient, which is very suitable for the production of soy sauce. There are still four time-honored sauce gardens settled here. Yuet Wo has been using non-genetically modified Canadian soybeans since then, and has used traditional ancient methods to brew soy sauce. Naturally sun-dried soy sauce has a delicious flavor that cannot be replaced by chemically synthesized soy sauce. It has always only focused on serving Hong Kong. Yuet Wo is the only sauce garden in Hong Kong that uses its own rice wine to ferment into vinegar. The store in Tsuen Wan Market Street is currently the only directly-operated store, and its signature product is 100% 100% Hong Kong-made sweet vinegar.
Yuet Wo Sauce Garden Seasoning Wine Series

Traditional Chicken Wine Making Method
Chinese people focus on dietary supplements, especially women who are physically and mentally tired after giving birth. If proper dietary supplements are used, it will bring great benefits to the body. In ancient times, materials were scarce, and chicken wine was simple and inexpensive, but it could maintain nutrients and restore physical strength, so it became a good product for traditional confinement. Chicken wine ingredients are mainly chicken, ginger and glutinous rice wine.
Chicken has high nutritional value and is rich in protein; ginger slices have the effect of dispelling cold and dissipating heat; rice wine can nourish blood and promote blood circulation.
In addition to the curative effect on mothers, chicken wine itself is also a very delicious home-cooked dish – the tender chicken is mixed with the mellow aroma of wine, the soup is extra fresh and sweet, and it can warm the body and the heart when it is cold. .
Materials (see Figure 1):
- 1 chicken (or chicken spleen) about 1 kg
- Yuet Wo Glutinous Rice Wine 630ml 1 stick
- 1 tablespoon oil
- Ginger slices about 30 grams
Note: Traditional chicken wine does not add medicinal materials, but fungus, golden needles or wolfberry (木耳,金針或枸杞) can be added according to personal preference
practice:
Wash the chicken with water, dry it, and chop it into pieces (if you don't like it too greasy, you can consider removing the chicken skin).
After the pan is hot, add oil, and sauté the ginger slices over a low heat (if the heat is too high, it will easily give out a bitter taste).
Turn to high heat, add chicken pieces and fry until golden brown (about 7 mature).
Add the glutinous rice wine, bring to a boil, reduce the heat, cover and bake for about 10 minutes or until the chicken is cooked through (if adding herbs, rinse it first, add it and bring to a boil before adding the cover).
tips:
Is it safe for mothers to drink chicken wine if breastfeeding?
Suitable for. After the glutinous rice wine is cooked, the volatile content of alcohol is greatly reduced, so the mother's breastfeeding after eating chicken wine has little effect on the baby. To completely prevent babies from absorbing alcohol through breast milk, experts recommend waiting 3 hours after eating chicken wine before breastfeeding or pre-storing breast milk before eating.
What should I do if there are children at home who don't like the smell of alcohol?
If the wine taste is too strong, you can dilute the glutinous rice wine with half wine and half water in advance, or boil the wine in another small pot before adding the wine to evaporate the alcohol.
