🌱  Producer introduction : Jack Pong, the third-generation descendant of Yuet Wo Sauce Garden, recalled the story of his grandfather. In the 1930s, he came to Hong Kong with the same sauce making technology, and took root in Tsuen Wan. With the rise of the catering industry, Yuet Wo also began to supply restaurants in Tsuen Wan. Therefore, a factory was set up on Texaco Road in Tsuen Wan, and the neighborhood was also mainly in the area. Yu moved the sauce garden to Gudong in 1971. Because the Gudong is flat and wide, there are no barriers in all directions, and the sunshine time is very sufficient, which is very suitable for the production of soy sauce. There are still four time-honored sauce gardens settled here. Yuet Wo has been using non-genetically modified Canadian soybeans since then, and has used traditional ancient methods to brew soy sauce. Naturally sun-dried soy sauce has a delicious flavor that cannot be replaced by chemically synthesized soy sauce. It has always only focused on serving Hong Kong. Cantonese traditional pork feet and ginger cooking method:



Ginger vinegar for maternal consumption should be prepared one month before the expected date of delivery. The amount is determined according to the number of mothers and relatives and friends. Sweet vinegar is packed in 5 catties or 10 catties as a unit, because the sweet vinegar sold in the market is generally packed in 5 catties. Or 10kg pack. Each catty of ginger needs at least one catty of sweet vinegar to soak the noodles, so 5 catties of ginger must be 5 catties of sweet vinegar to be enough.

1. Equipment:
The clay pot is the first choice, and the new clay pot should be soaked in water overnight before use. The capacity of the clay pot, 5 catties of ginger and 5 catties of vinegar should use a minimum of 10 catties of clay pots (excluding pig feet and eggs). If you use 10 jins of ginger and 10 jins of vinegar, you should also use a minimum of 20 jins of clay pots (excluding pig feet and eggs), and so on.

2. Material:
Yuet Wo Premium Sweet Vinegar, Ginger, Pork Knuckle, Egg, Yuet Wo Black Glutinous Rice Vinegar, Salt. Women should use old ginger to supplement their body after giving birth. Seed ginger can be used for normal consumption (instant pot). When buying pork knuckles, you should choose a reliable meat stall and use fresh and tender pork knuckles.

2.1. Preparations:

3.1. Cooking method:
Dip Ginger Vinegar - First cook ginger in sweet vinegar. Put the fried ginger pieces into the clay pot, build it up, and then add the sweet vinegar. On the contrary, if you drop the sweet vinegar first and then the ginger, because the ginger is floating, the sweet vinegar powder will definitely cover the ginger noodles.

3.2. Cooking points:
Use medium heat (slow heat) to start a fire. If the heat is too high, the clay pot will crack. After boiling, turn to low heat and continue to cook for 45 to 60 minutes before turning off the heat. Cover it and store it in a cool place in the shade. It can be boiled again during the day, and it can be boiled again in 10 to 15 days when it is cool in autumn or winter. Turn off the heat immediately after 15 minutes of boiling.


Pork Knuckle Ginger:
Add the boiled ginger vinegar to the pork knuckle and eggs. At this time, according to personal preference, add an appropriate amount of feet or pig feet, but pay attention that both the pig feet and pig feet should be drained and oiled. After the eggs are cooked, peel the shells, and stew the pork feet together to serve.
