Product Description:Sweet and light in taste, slightly cold in nature. It has the functions of diuretic water and phlegm, clearing away heat and detoxifying, removing irritability and quenching thirst. Chinese medicine believes that winter melon seeds have curative effect on lung carbuncle and intestinal carbuncle. Winter melon is rich in water, which can not only replenish water for the human body, but also bring diuretic effect, which helps to avoid the occurrence of edema; in addition, it gives people a feeling of fullness after eating, which has a certain effect on diet and weight control.
Native to China and East India, distributed in tropical Asia. China has begun to cultivate in the Qin and Han dynasties. It was introduced to Europe in the 16th century and to the Americas in the 19th century. Now it is cultivated all over the world, but China is still the most widely cultivated country, and it is famous for cultivation in Haizhu District, Baiyun District and Panyu City of Guangdong.
Variety:Winter melon is a creeping herbaceous plant, and its fruit is mainly eaten as a vegetable. The surface of immature winter melon fruit is hairy, so it is also called hairy melon. When the fruit matures, the skin forms a layer of waxy white frost, which is beneficial to its longevity. Winter melon leaves are nearly round, with 5-7 lobes or middle lobes, and bristles on both sides; the flowers are unisexual, monoecious, and yellow; the fruits are large, long cylindrical or nearly spherical, with hairy and white powder on the surface, and thick, white flesh; Seeds ovate, white. Typically weighing 10 to 20 kilograms.
This plant has two cultivated varieties: "small-fruited winter melon" and "large-fruited winter melon". The former matures early, with smaller, nearly round fruits, such as Beijing's "One String of Bells" and Taiwan's "Round Winter Melon"; the latter matures late, with large, long cylindrical fruits with waxy powder on the skin, such as Guangdong's "Green Skin Winter Melon" and Hunan's "pink-skinned winter melon".
In summer, you can find four types of winter melon: black skin, white skin, green skin and mini winter melon, each with different uses.

Peel the winter melon, pick out the tendons, and puncture holes, put it into a deep container, pour in the soup, cover the winter melon, and simmer for 45 minutes.
Remove the winter melon and reserve the remaining juice for gravy.
While the winter melon is simmering, boil the fresh bamboo shoots, fresh mushrooms, Jinhua ham and shenggua in the fillings. Except for the crab meat, all the other fillings need to be oiled and set aside.
Place the dried onions in a wok, sauté the duck meat cubes until fragrant, add the oil fillings, then add the boiled water fillings, season to taste, add the crab meat and stir-fry quickly before taking it out of the wok.
Place the stuffing into the hollow part of the winter melon, then flip it over onto a plate (top side up).
The gravy is made from the remaining soup from the stewed winter melon, add an appropriate amount of thick chicken soup and heat it up, add a little cornstarch, mix well, and pour it on the winter melon to serve.
Tips
It is best to choose a winter melon that weighs 10 pounds. The flesh is thick enough but not too old. The top is thicker than the bottom, so it is most suitable for making this dish.
To make the winter melon loose in the mouth, you must peel the skin and pick out the tendons. For the best effect, fry the winter melon in a deep frying pan to remove the excess water before stewing it in soup.
It is recommended to use white oil (unused oil) to prevent the winter melon from inhaling odor.
For soup, the fragrant chicken and duck soup is best paired with the sweet winter melon.
Prick the winter melon before stewing it in soup to make it more flavorful.
After burying the gravy, sprinkle a little salted egg yolk to enhance the flavor.
For a simple homemade version, you can replace some of the fillings with boiling water, and if there is no soup, you can use commercially available ready-made chicken soup instead.
