Uzbek Walnut Kernels (from Uzbekistan) are premium, high-quality shelled walnuts renowned for their rich, buttery flavor, golden-brown color, and consistently excellent texture. Grown in Uzbekistan's favorable sunny climate (over 300 sunny days a year) and fertile soils—especially in regions like the foothills and valleys—these kernels boast high oil content (often over 60-70% fats), plump halves, clean aroma, and natural sweetness with a mild nutty earthiness. Uzbekistan is emerging as a key producer and exporter of walnuts, with strict quality controls, non-GMO practices, and careful processing to ensure purity without additives.

As walnut kernels mature, the outer shell becomes brittle and the outer shell becomes hard. The shell surrounds the kernel or flesh, which is usually divided into two halves separated by a membranous partition. The seed kernel (usually available in the form of shelled walnuts) is enclosed in a brown seed coat that contains antioxidants. Antioxidants protect the oil-rich seeds from atmospheric oxygen, preventing them from becoming rancid.
Note: Storage
Walnuts, like other nuts, must be processed and stored correctly. Improper storage makes walnuts susceptible to infestation by insects and fungal molds; the latter produce aflatoxin, a potent carcinogen. Batches of walnuts containing mold infection should be discarded completely.
The ideal temperature for long-term storage of walnuts is -3 to 0 °C (27 to 32 °F) with lower humidity for industrial and home storage. However, in developing countries where walnuts are produced in large quantities, this freezing technology is not available; walnuts are best stored below 25 °C (77 °F) and with low humidity. Temperatures above 30 °C (86 °F) and humidity above 70% will result in rapid and severe spoilage losses. Above a humidity threshold of 75%, aflatoxin-releasing fungi form.
