The main ingredients of "mulled wine" are: wine, spices, fruits, and sugar.

Wine: The main part of wine is red wine, but of course, as mentioned earlier, it can be replaced by other alcoholic beverages, and there is even a "non-alcoholic version" that can be replaced by fruit juice (usually orange juice or apple juice).

Spices: The four most common spices are "cloves, cinnamon, cardamom, and ginger" which are indispensable, but there are also recipes that add star anise, bay leaf, and rosemary, which can be combined according to personal preference.
Fruit: The necessary fruit is "fresh orange", and you can add lemon or apple according to your personal preference.
Sugar: The original sugar part is of course "granulated sugar", but later many people will switch to brown sugar, maple sugar or honey.

Because heating wine will amplify its taste, when choosing red wine, remember to "avoid choosing wines with high tannins" (which will increase the astringency and scratch the mouth). Grape varieties with higher tannin content such as Cabernet Sauvignon, Nebbiolo, Mourvedre, Malbec, Tannat, Shiraz, Tempranillo, Merlot, Sangiovese, Zinfandel...etc., grape varieties with lower tannin content such as Pinot Noir, Gamay, Grenache...etc., but there are still many People use Merlot and Cabernet Sauvignon.

Associated especially with Sweden, but also with Denmark, Norway, Finland, and Estonia, glögg is a traditional Nordic drink during winter, especially around Christmas.

Glögg recipes vary widely; variations commonly start with white or sweet wine or spirits such as brandy or cognac. The production of glögg begins by boiling water and adding spices to it. After a few minutes of simmering, the mixture is sieved and fruit juice, wine or clear spirits are added. Other versions begin by warming up the wine, alcohol, and sugar (not boiling it) and letting the spices steep in it overnight. The most common spices in glögg are cloves, cinnamon, cardamom and ginger. Other common ingredients can include citrus peel from oranges or lemons, raisins, or almonds.

Glögg can also be made without alcohol by replacing the wine with fruit or berry juices. In shops ready-made glögg is usually based on grape juice, sometimes also blackcurrant juice, mixed fruit juice, apple juice or wine. There are also stronger, rum-based types of glögg. Ready-made glögg from shops is warmed up before use, but if it is wine-based or high in alcohol content, it should not be heated to boiling point. It is common to add whole almonds or raisins to glögg while it is being warmed up or just before drinking.

The cooking method of hot wine


The cooking method is to cook all the ingredients with about a quarter of the red wine with small and medium heat together. When the cooking is about to get to the boiling point, it will turn to low heat for 15 minutes (can be rolled but try not as much as possible). Finally, add three -quarters of the remaining red wine and heat until there is smoke. (The most suitable drinking temperature is about 45 ~ 50 degrees c.)

When making hot wine, boil water and add spices. After cooking for a few minutes, filter out the spices and add black gallon juice and wine or liquor. The most common spices in Finland's hot red wine are lilacs, cinnamon and ginger, and sometimes add orange peels and small cardamom. The same spices are often used in gingerbread. Before drinking hot red wine, raisins and tonsils are usually added.

And the fruit needs to be noticed: some people choose to cut it directly, which is okay. And some people squeeze the fruit of fruit and flesh, and cook only the juice and peel; but if this is the method, remember that the white fiber of the peel should be completely removed!

熱酒的煮法


煮法是先將所有的材料跟大約四分之一的紅酒一起用中小火一起煮,煮大概到快到沸點快要滾的時候,轉小火慢煨 15 分鐘(可小滾但盡量不要),最後再加入剩下四分之三的紅酒加熱直到有冒煙即可。(最適合的飲用溫度為 45~50 度 C 左右。)

製作熱酒時通常是把水煮沸後加入香料。熬了幾分鐘後把香料過濾掉,並加入黑加侖果汁及葡萄酒或烈酒。在芬蘭熱紅酒中最通常的香料是丁香、桂皮和薑,有時也添加橙皮和小豆蔻。在薑餅干中經常使用相同的香料。喝熱紅酒之前通常還添加葡萄乾和扁桃果仁。

而水果需要注意的是:有些人會選擇直接切片下去煮,這是可以的。而有些人會將水果果肉榨汁,只加入果汁跟果皮煮;但如果是這個作法的話,切記果皮的白色纖維要完全去除!
