Local Silver Pomfret (白䱽 / 白鯧 / Silver Pomfret)
It is one of the true members of the Stromateidae (pomfret) family and is prized for its delicate, tender, and flaky flesh with minimal bones.
This fish is celebrated for its fine texture, natural sweetness, rich yet light oil content, and subtle crab-like aroma without any strong fishy or muddy taste. It is often regarded as a top-tier seafood, especially during festive seasons in Hong Kong, where fresh local catches from nearby waters are preferred for superior flavor and quality. Sizes around 300g or larger are ideal, offering the best balance of meat and fat content.
Culinary Highlights: Best enjoyed simply by steaming (clear-steamed with ginger, scallions, and soy sauce) to preserve its natural sweetness and silky texture. It also excels when pan-fried until crispy, deep-fried with salt and pepper, braised, or used in soups and rice vermicelli dishes. Its versatility makes it perfect for Hong Kong-style seafood banquets, family meals, or festive celebrations.

In Taiwan, white pomfret has been one of the most expensive edible fish since the Qing Dynasty. Taiwanese people like to use white pomfret during the Spring Festival to worship the gods, ancestors, gather around the fire or entertain guests. Especially since the 1980s, it has been the most popular fish for New Year's Eve dinner and the most sought-after fish during the Spring Festival, causing the price of white pomfret to remain high. In recent years, golden pomfret or black pomfret has also been favored by Taiwanese consumers. Some fishmongers use Chinese pomfret (dou pomfret) to impersonate white pomfret, and make a fortune by passing off fake ones as genuine ones. The grade and meat quality of Chinese pomfret are very different from those of white pomfret. There is a mnemonic for identifying them: "Chinese pomfret has a long chin, white pomfret has a round mouth; Chinese pomfret has a round tail, white pomfret has a pointed tail."
